Well..! I just started my final year back at university last week, which essentially means as of now I have no life, no friends and no time. Clearly I’m so enthusiastic about this.
So obviously, as a student, I need quick and healthy meals that are cheap and heavy on the carbs (because carbs make everything so much better).
No chance of scurvy if I keep this up.
- 200g spaghetti
- Zest of 1 lemon
- Juice of 1/3 lemon
- ½ clove garlic, minced or finely chopped
- Olive oil
Bring a large saucepan of water to boil, adding around half a tablespoon of salt. Add the spaghetti and cook according to instructions – around 9 minutes.
Once cooked, drain the spaghetti (reserving around 1 tablespoon of the cooking water), then place back into the saucepan. Next add one tablespoon of olive oil, the lemon juice, zest and minced garlic. Season with salt to taste, and generously with freshly ground pepper.
